Fresh
Cucumber Mint Yogurt Smoothie
Cucumber, mint and plain yogurt make a savoury-leaning, cooling blended drink. It's a refreshing option for people who want something less fruit-forward.
Ingredients
| Ingredient | Amount |
|---|---|
| Cold water | 95ml |
| Plain yogurt | 90g |
| Peeled cucumber, deseeded and finely diced | 75g |
| Fresh mint leaves | 3 to 4 small leaves |
| Lemon juice | Half a teaspoon |
Method
- Wash and prepare the cucumber. Remove large seeds if you prefer less watery texture, and cut the flesh into small pieces.
- Add cold water and yogurt to the blender bottle, followed by cucumber, washed mint and lemon juice.
- Ensure the bottle is not overfilled. Blend following the manufacturer's instructions and stop if the ingredients jam.
- Serve chilled and clean the bottle promptly after the yogurt drink.
Make it your own: For a drink closer to a thin yogurt lassi, use a little more water and a little less yogurt in your next batch. Adding salt is optional; start without it and season to taste after blending.

For compact blending, add liquid first and cut firmer ingredients into smaller pieces. If the mixture is too thick to circulate, add a small splash of liquid and blend again.
